1- Pour all ingredients into a shaker except for the sparkling wine.
2- Add ice and shake vigorously for 10 seconds.
3- Double strain with the use of a fine strainer into a highball glass with ice.
4- Top with sparkling wine.
5- Garnish with a thyme sprig.
* Simple syrup is equal parts sugar and water. Dissolve sugar in a saucepan over medium heat. Strain into a sterilized jar and seal tightly with a lid.
