– 1.5 oz Madison Park Breakfast Gin
– 1 oz Fresh lemon juice
– 0.5 Simple syrup *
– 1 Tbsp fig marmelade
– 1 Egg white
– Club soda
– 1.5 oz Madison Park Breakfast Gin

– Club soda
1. Pour all the ingredients into a shaker, except for the club soda.
2. Shake vigorously the first time without ice (dry shake), for 10 seconds.
3. Add the ice cubes and shake vigorously again.
4. Double filter into a glass filled with ice cubes using a fine strainer.
5. Top with club soda to obtain a foamy neck.
6. Garnish with a spritz or dash of orange blossom water and a fresh fig. If not available, garnish with pomegranate seeds sprinkled on top.
* Simple syrup is equal parts sugar and water. Dissolve sugar in a saucepan over medium heat. Strain into a sterilized jar and seal tightly with a lid.
