1. Crush the celery at the bottom of a shaker using a muddler.
2. Pour the rest of the ingredients into the shaker.
3. Dry shake (without ice) vigorously for about 10 seconds.
4. Add ice and wet shake again for about 10 seconds.
5. Double strain using a fine sieve into a glass filled with ice.
6. Garnish with a sprig of fresh dill.
* Simple syrup is equal parts sugar and water. Dissolve sugar in a saucepan over medium heat. Strain into a sterilized jar and seal tightly with a lid.
